Vegan Lentil Curry

 

Ingredients:

  • 1 cup cooked lentils
  • 1/2 cup coconut milk
  • 1 tablespoon curry powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1/4 cup chopped cilantro (for garnish)

Instructions:

  • Heat olive oil in a pan over medium heat.
  • Add chopped onion and minced garlic, sauté until translucent.
  • Stir in curry powder, turmeric, and cumin, cooking for 1 minute.
  • Add cooked lentils, diced tomatoes, coconut milk, salt, and black pepper.
  • Simmer for 2-3 minutes until heated through.
  • Serve hot, garnished with chopped cilantro.
